FN 4700 and PUBH 5800
This 3-week course will be offered the summer of 2025. The course will run from July 14th - August 1st. The first week will be orientation and the next two weeks will be spent in Barbados.
How many credits will I obtain?
You will obtain 3 credits for this course and receive over 60 hours of experiential learning.
What will I learn?
It's all about nutrition. The high incidence of chronic disease is an international problem, but it has hit the Caribbean especially hard. You will learn more about the chronic diseases (such as diabetes type II, hypertension and end-stage renal disease), their impact on the local community and their nutrition management.
What will I do?
First, you will learn all about the Barbadian culture, people and cuisine. Tours, like the Bajan Food Walking Tour through Bridgetown and cooking demos or classes with local chefs will introduce your tastebuds to the flavors and dishes of Barbadians. Horseback riding through the countryside and to the Beach and strolls through some of the most beautiful gardens in the Caribbean will educate you on the foods that grow and flourish under the Bajan sun, and how the locals use them both as nourishment and for healing.

Then, you'll get the opportunity to work with health organizations such as the Diabetes and Hypertension Association of Barbados. You'll help design and implement nutrition fairs for adults and children's health camps. You'll even get to volunteer some time working with local farmers in the fields or at the local open market.
